Ingredients

1 Tbsp Olive Oil
1 Leek Leeks
2 Medium Carrots
1 Potato large (3" to 4-1/4" dia) Potato
5 Clove Garlic
1 Tsp Salt
1 Bunch Broccoli

Directions

Cut the leek and fry in oil in a skillet over medium heat.

After few minutes add chopped carrots and potato.

Add hot water to cover and bring to a boil.

Cook until potatoes are fork tender.

Add chopped garlic and broccoli.

Boil for few minutes until broccoli is tender.

Transfer mixture to a blender or use a stick blender to pulse until smooth.

Serve hot and enjoy!
