1 1/2 Cup Chicken Broth
1 Cup Water
2 Tsp Garlic
2 Small Onions
4 Cup chopped Broccoli
2 Cup Spinach
1 2/3 Cup White Beans
1/2 Cup, shredded Cheddar Cheese
1/4 Tsp Salt
1 Dash Pepper
Combine all ingredients into a pot over medium high heat
Bring to a boil, and then turn down to a simmer.
Cover and allow to simmer for 20–25 minutes, until all vegetables are tender
Remove from heat and use an immersion blender to purée, or blend in batches in a processor/blender
Return to the pot and add an additional 1/2-1 cup of water if the soup is too thick.
