6 Large (2-1/4 per lb, approx 3-3/4" long, Green Bell Pepper
1/2 Large Onions
1 Cup, pieces or slices Mushrooms
1 Tbsp Olive Oil
1 Tbsp Garlic
1 Dash Salt
1 Dash Pepper
14 Oz Slow Roasted Roast Beef
12 Slice (1 oz) Provolone Cheese


Preheat oven to 400 degrees F.

Remove tops and seed from bell peppers.

Slice onions and mushrooms.

Heat oil in a pan over medium heat.

Saute onions and mushrooms with garlic, pepper, and salt until tender, about 10-12 minutes.

Slice roast beef into strips

Layer roast beef, vegetables, and cheese in layers (two slices of cheese per pepper) inside the pepper

Bake for 10-15 minutes or until cheese is golden brown.
