1 Large Onions
10 Cup Water
1 Tbsp Peppercorn
2 Chicken, bone and skin removed Chicken, Meat Only
2 Cup chopped Carrots
1 Stalks, large (11 inches long) Celery
Chop carrots.
celery, and onion.
Place whole chicken in a large pot with onion, carrots, celery and peppercorns; add water to cover.
Cover pot and bring to a boil; reduce heat to a gentle boil and cook for about 90 minutes, or until chicken meat is falling off of the bone.
Remove chicken, let cool and shred or chop the meat.
1 serving is a quarter of the chicken.
