2 Strip Bacon
2 Tbsp Vinegar
1 Clove Garlic
1 Dash Salt
3/4 Cup Sour Cream
0 Grams Chives
2 Tbsp Olive Oil
1 1/2 Tbsp Whole Milk
8 Cup Spinach
1 Medium whole (2-3/5" dia) Tomatoes
1 Cup Croutons


Bake bacon for 15 minutes in a 400 degree oven.

Drain on paper towels and chop.

For dressing: in a small bowl combine vinegar, garlic and a pinch of salt; let stand 10 minutes.

Wisk in sour cream, chives and olive oil.

Thin with milk to desired consistency.

Arrange spinach, tomatoes, chopped bacon, and croutons on a platter.

Drizzle with dressing.

Sprinkle with additional chopped chives.

Serve and enjoy!
