2 Cup Black Beans
1/2 Cup, chopped Onions
1 Tsp, ground Cumin
1 Tsp Paprika
2 Tbsp Fresh Cilantro
1 0 Cup, shredded Monterey Cheese
2 Tbsp Olive Oil
1 Dash Salt
1 Dash Pepper
8 Tortilla Tortillas
1 Fruit Avocados
1 Tsp Pepper Or Hot Sauce
1/2 Cup Salsa
1 Oz Sour Cream
Add beans, onion, cilantro and spices to a medium sized bowl.
Add a pinch of salt and mash ingredients together.
Heat oil in a large non-stick skillet over medium-high heat.
Heat corn tortillas one at a time in the oil for a few seconds.
Add 1/4 cup of the filling to half of the tortilla.
Sprinkle with cheese.
Fold tortilla over to form shell and press down lightly.
Cook until each side is crisp, carefully flipping as needed.
Repeat with remaining tortillas.
Serve hot with desired toppings and enjoy!
