1 Medium (7" to 7-7/8" long) Banana
1/3 Cup Rolled Oats
1 Tbsp Peanut Butter
1 Tbsp Sugar
1 Large Egg
In a microwavable mug or mold, mash the banana.
Grind the oats in a food processor to make oat flour.
Add the peanut butter, sugar, and egg to the mug; whisk well to combine.
Add the oat flour to the mug and mix well until everything is combined.
Microwave the mug with batter for 1 minute to 2 minutes, depending on microwave power setting.
Muffin should be firm and spongy.
