1 Cup Water
5 Oz Cashew Nuts
1 Medium (7" to 7-7/8" long) Banana
1 Cup Ice Cubes
1 Tsp Vanilla Extract
Boil the water.
Place cashews in a blender.
Pour the boiling water over them and cover.
Let stand until softened, about 15 minutes.
Purée in the blender on high speed until smooth, about 3 minutes.
Add banana and purée again.
Add ice and vanilla extract; blend until smooth.
If necessary, add a bit of extra water to reach desired consistency.
