2 Medium (7" to 7-7/8" long) Banana
1 Tbsp Chia Seeds
3 Tbsp Water
1 Cup Rolled Oats
1/4 Cup Water
1/4 Tsp Salt
1/2 Tsp Cinnamon
1/2 Tsp Baking Soda
1 Cup Blueberries
Preheat your oven to 350F and line a standard muffin tin with baking cups.
Stir together the ground chia seeds and first portion of water.
Allow the mixture to sit for 5 minutes, until slightly thickened and gel-like.
Then, add in the rest of the ingredients and stir well to combine.
Divide the batter among the baking cups and bake until firm and lightly golden, about 20 minutes.
