Ingredients

1 Potato medium (2-1/4" to 3-1/4" dia) Potato
2 Strip cooked Bacon
2 Extra large Egg
1 Tortilla (approx 7-8" dia) Tortillas

Directions

Chop potato into bite-sized pieces.

Cook potatoes and bacon in skillet until bacon is crisp and potatoes are tender.

Whisk eggs and add to skillet, cooking until eggs are set.

Warm up a tortilla.

Put egg mixture onto tortilla, roll up, and enjoy!
