4 Strip cooked Bacon
1 1/2 Medium Baby Zucchini
2 Cup Spinach
1/4 Cup, chopped Onions
1/2 Cup, chopped Red Bell Pepper
10 Extra large Egg


Preheat oven to 350 degrees F.

Prepare a muffin tin with non-stick spray.

Cook bacon in a pan over medium heat until desired crispiness is reached, drain on paper towels, chop, and set aside.

Shred zucchini, chop spinach, onion, and pepper.

Whisk together the eggs.

Fold all ingredients together.

Divide mixture into the muffin tin.


Bake for 20-25 minutes or until eggs are set.
