2 Cup Mashed Potatoes
4 Strip Bacon
1 Large yolk (separated from white) Egg Yolk
2 Stalk Onions
1 Cup Wheat Flour
1 1/2 Oz Mozzarella Cheese
1 Cup Bread Crumbs
1/4 Cup Lowfat Milk
1 Large Egg
5 Tbsp Olive Oil


Prepare mashed potatoes: Place chopped potatoes in a pot and cover with water.

Bring to a boil and over hight heat and cook until fork tender.

Drain, mash, and set aside.

Heat a non-stick frying pan over medium heat and cook bacon 3-4 minutes, or until crisp.

Drain on paper towels and chop.

Combine mashed potato, egg yolk, onion, bacon, and ¼ cup of flour in a large bowl.

Roll heaped tablespoons of mixture into balls.

Push one cheese cube into the center of each ball, molding mixture around to enclose the cheese.

Place remaining flour on a plate and breadcrumbs on another plate.

Whisk milk and egg together and place in a shallow bowl.

Roll croquettes in flour shaking off any excess.

Dip in egg mixture then coat in breadcrumbs.

Heat oil in frying pan.

Cook croquettes in batches until golden brown, then transfer to a plate lined with paper towel and serve hot.
