1 Lb Asparagus
1 Medium (2-1/2" dia) Onions
2 Cloves, minced Garlic
3 Cup Vegetable Broth
1/4 Tsp or 1 packet Mustard
1 Tsp Lemon Zest
In a large saucepan, sauté the asparagus, onion, and garlic in ½ cup broth until the onion is tender, about 5-8 minutes.
Transfer the mixture to a food processor or blender.
Add the remaining broth and purée until smooth.
Pour the mixture into a pot and simmer, covered, for 20 minutes.
Add the mustard and lemon zest.
Mix well and serve.
