1 Lemon yields Lemon Juice
1 Tbsp Soy Sauce
1/4 Oz Stevia Sweetener
3 Tbsp Olive Oil
1 Tsp Flaxseed Oil
1 Dash Salt
1 Dash Pepper
1 Cup Stringless Sugar Snap Peas
1 Cup Asparagus
2 Cup shredded Lettuce
2 Cup Cabbage
2 Medium (4-1/8" long) Scallions
4 Cup Fresh Cilantro
To make the dressing: whisk together lemon juice, soy sauce, stevia, olive oil, flaxseed oil, and season with salt and pepper to taste; set aside
Bring a medium pot of salted water to a boil.
Add asparagus and snap peas, bring the water back up to a boil, then drain and refresh in ice water.
Dry the vegetables well, and combine with romaine, napa cabbage, scallions, and cilantro in a medium bowl
Toss with dressing to taste and serve immediately.
