Ingredients

1 Cup Quinoa
1 Cup slices Cucumber
1 Small Red Bell Pepperr
1 Cup, chopped Red Cabbage
1/2 Cup grated Carrots
1/4 Cup Soy Sauce
1 Tbsp Sesame Oil
1 Tbsp Rice Wine Vinegar
2 Tbsp Onions
1 Cup Fresh Cilantro
1 Tbsp Sesame Seeds
0 Tsp Ginger Root
0 Tsp Crushed Red Pepperr Flakes
1 Dash Salt
1 Dash Pepper

Directions

Prepare quinoa as per package directions.

Dice cucumber and red pepper.

Place the cooked quinoa in a large bowl and add the cabbage, red pepper, carrots, and cucumber.

Set aside.

In a small bowl whisk together the soy sauce, sesame oil, rice wine vinegar, green onions, cilantro, sesame seeds, ginger, red pepper flakes, salt, and pepper.

Pour the dressing over the quinoa salad and stir to combine.
