1/2 Medium whole (2-3/5" dia) Tomatoes
1 Tsp Balsamic Vinegar
1 Cup Arugula
1/3 Tbsp Olive Oil
In a large plastic bowl with a lid, combine arugula, cherry tomatoes, pine nuts, oil, vinegar, and Parmesan cheese.
Season with salt and pepper to taste.
Cover, and shake to mix.
